This is the perfect quick dinner when you only have the time or patience to boil a pot of noodles. Better yet, it's delicious served hot or cold and leftovers make a great lunch.
Tofu note: we use pre seasoned baked tofu as a shortcut here but feel free to sub in your own marinated or leftover tofu. We found that crumbling the tofu (vs. cubing) ensures you get the perfect amount in every bite. Simply crumble the tofu between your fingers, don't be shy get in there! 🤗
Bring a large pot of water to a boil and cook soba noodles per package instructions. Check them a few minutes before the suggested time to make sure they don't overcook.
Drain the noodles and rinse well with cold water.
In a large bowl whisk together the soy sauce or tamari, sesame oil and tahini. Add the soba noodles and stir until coated.
Add the kimchi, scallions, sesame seeds and tofu. Stir to combine.
Finish with a sprinkling of extra sesame seeds or scallions and serve!
