This is a variation of our most commonly eaten breakfast. It's got a ton going for it. Most importantly, it's delicious. It also has a lot of protein, fiber, phytonutrients and probiotics. As a bonus, since it has apple cider vinegar, it'll help you regulate your blood sugar after you're done eating. Since this takes only about 5 minutes to make, you can throw it together on your way out the door.
Combine 1/4 cup 10 grain cereal with 3/4 cups water and microwave for 3 minutes, or follow stovetop instructions.
While your cereal is in the microwave, heat a splash of olive oil over medium high in a pan, then add your greens and sautee with a teaspoon of apple cider vinegar until wilted. Season with salt and pepper.
Warm up your black beans for about a minute in the microwave, or on the stovetop until warm
Give your cereal a stir and season with a little salt and pepper. Add your black beans, wilted greens, and sauerkraut.
