We love a vegetable soup. On our daily mission to hit our 6+ servings of veg a pile of coooked down greens and peas in a soup just make life really easy. ... I should also mention, this soup is also delicious.
As with all the soups on our site, play with it! Changing out the veggies can give a much different feel. Carrots rather than peas? You're ready for a cold winter night.
Heat the oil in a pot. Add scallions and cook until translucent (3-4 mins). Add garlic and cook for another minute.
Add the broth, quinoa, thyme, and some pepper. Boil until quinoa is cooked. (15-20 minutes)
Mix the miso paste into the cooking soup.
Add the peas, spinach, beans and chickpeas. Simmer until spinach is cooked down.
Add the lemon juice and season with salt and pepper to taste.
Put in bowls and top with pesto.
