Honestly we've never been stoked on tofu scrambles, but calling this a "tofu scramble" would be a complete misnomer. It's more like jammy onions with really really good tofu 😋 Silken tofu has a certain "je ne sais quoi" when paired with toast. In this recipe onions create an umami base, smoked harissa adds depth of flavor and silken tofu gives the rich flavors room to breath. Enjoy it on a thick slice of good bread.
In a large skillet or frying pan, heat olive oil over medium-low heat. Cook the onions, with salt stirring often, for 10-12 minutes until softened and lightly caramelized. When the onions start to brown add a splash of water to speed up the softening
Add garlic and cook for another minute until fragrant.
Add harissa and stir to combine. Cook for another 1-2 minutes.
Using your fingers, crumble the silken tofu into the pan and mix to combine. Cook for another 3-4 minutes.
While the tofu cooks toast your bread.
Top the toast with tofu and sprinkle scallions overtop.
