Larb is a traditional Thai dish made usually made of Pork or Chicken. This Vegan re-interpretation turns into a fun fresh dish you can eat when you want a fresh lunch.
Preheat the over to 450°.
Roughly chop the Cauliflower and toss it with Olive Oil massaging the oil into the florets.
Roast the Cauliflower until it's browned. About 30 minutes.
Let the Cauliflower cool slightly and chop it into pea sized pieces.
Add the chopped Hot Peppers, Lemon Zest and Lime Zest and Lime Juice. Toss Well.
Toast the Rice on a skillet at medium heat, tossing it to make sure it doesn't burn until browned. (About 15 minutes)
Let the Rice cool and grind it to a power in a spice mill.
Toss Green Onions, Cilanto and Mint with the Rice and Cauliflower mixture. Season with Salt.
Serve with Cucumber and Lettuce as scoops.
