We're always looking for a reason to eat bread and this Bean Toast is a weeknight dinner go-to for us. We love toast and usually always have cooked beans in the fridge (canned works too!), so this takes less than 15 minutes.
In a large skillet or frying pan heat 1 tbsp of olive oil. Add shallots and garlic and cook until shallots are translucent (about 4 minutes).
Add cumin seeds and cook until fragrant (about 1 minute).
Add rice vinegar and cook until it's mostly evaporated.
Add the lemon juice, lemon zest and beans. Cook until heated and the liquid becomes creamy.
Add chopped swiss chard and cook until wilted.
Toast bread, top with beans and garnish with some fresh dill. Enjoy!
