Fennel

Fun Fact. Fennel is part of the carrot family. Fun Fact 2. The bulbs grow above ground. You can eat the whole thing, so don't throw away the fronds which make for beautiful garnish.

It's high in fiber, low in calories and very high in a delicious licorice like flavor. Our favorite thing to do with it is carmelize it and put it on almost any recipe. It goes well with earthy flavors like tempeh, and also goes really well with bright flavors like vinegar.
